The Beginning

The year that changed everything.

Eight years ago, I was diagnosed with nasopharyngeal carcinoma — a rare and aggressive cancer of the head and neck. The radiation and chemotherapy that saved my life also left me with something I never expected to lose: my sense of taste.

The condition is called radiation-induced dysgeusia. In plain terms, it means the spicy food I had loved my entire life — the heat I had trained myself to crave and seek out — became something I could no longer tolerate. The thing that had brought me the most joy at the table had been taken from me by the very treatment that kept me alive.

Cancer also left me with a hip that required full replacement, and a thyroid damaged enough to require daily hormone medication for the rest of my life. Eating well — eating food that felt genuinely satisfying — became not just a pleasure but a necessity I had to work for every single day.

For a man who could no longer fully taste what he was eating, that was a particular kind of challenge.

The Search

Eight years of looking for the right flavor.

I wasn't looking to start a company. I was looking for a sauce. Something with enough smokiness and complexity to cut through a damaged palate. Something warm enough to satisfy the memory of the heat I had loved, without overwhelming a tolerance I was rebuilding from near zero. Something that made food feel like food again.

The commercial hot sauce market kept disappointing me. Too much heat with no depth. Too much vinegar with no soul. I needed something different in kind, not just in degree. More layered. More considered. A sauce that made whatever it touched taste more like itself.

When I finally found it, it came through the kind of trust that only exists between people with a shared history and a genuine friendship. A partner of mine had been quietly perfecting a recipe in his own kitchen for years — driven by the same conviction I had, that the hot sauce world had consistently failed to deliver real flavor complexity. His sauce was built around smoky chipotle chile, fresh locally sourced herbs and spices, and a heat structure that built slowly and stayed with you.

We didn't build Salsamigos because we identified a gap in the artisan condiment market. We built it because we made something that made people happy, and we believed that was worth more than any trend report could quantify.

My partner continues to work hard behind the scenes — refining the recipe, building the ingredients, and putting everything into growing this brand alongside me. This is a collaboration built on years of shared passion and genuine friendship, and every bottle reflects that.

When we bring Salsamigos to a farmers market or a tasting event, what we are watching for is not a sale. It is the expression on a person's face when the flavor registers. The pause.
